Cacao as you have never tasted before, but also as you would never have imagined: the flavour of legends. Chuaothe name of the plantation and the Venezuelan peninsula where the cocoa beans are cultivated differently, naturally selected over the centuries on that land. It is the first time that this cru a natural blend is processed in its purity: in fact, until now it has always been used to aromatize various chocolates to give them a greater aromatic strength. The name Chuao is associated with the legendary cacao of the Mayans, of primeval flavour, of the earthly paradise where the ambrosia of the gods is grown. Aromas: Fresh aroma of cacao and of processed chocolate, with red fruit (cherry, raspberry, redcurrant) and exotic fruit sensations. Taste: Clean snap, delicate flavour, fresh, acid, takes possession of the mouth with decisive notes of fully matured redcurrant and cherry, expanding in all directions. It evolves into a flavour of fresh fruits and closes with a sensation of honey and preserves. Very long-lasting persistence and balanced acidity. An enthralling chocolate.
The direct relationship that Alessio Tessieri has developed with the plantations, the cacao producer and his agricultural scientists has led to the discovery of this true earthly reasure, a kind of relic, practically extinct, of the small Venezuelan plantations that produce 3,000 kilos of beans. This is a genetically pure criollo, known as porcelainfor the distinct white colour of the bean which bears a very pale chocolate albeit 70% plain. The expression of a cacao that is a complete break from the chocolate we are used to on the world market. Aromas: A pervasive aroma rich in rare and valued woods, bread baked in a wood oven, and with a delightful note of olive pulp and bay leaf, evolves in a floral and powerfully fresh sensation of jasmine and white flowers. Taste: Decisive snap, slightly acid at first then filling the mouth with notes of toasted almond and white flowers. It is a chocolate with a very long and eurhythmic aftertaste that harmonizes the entire palate.
